    Pumpkin bread

    Pumpkin Bread


    2 cups flour
    1/2 cup sugar
    1 teaspoon baking soda
    1/2 teaspoon cinnamon
    1/2 cup vegetable oil
    1 cup canned pumpkin
    1/2 cup chopped nuts
    1/2 cup raisins
    1/3 cup water
    2 eggs and crushed shells
    (you can also add veggies)

    In large bowl blend flour, oil, pumpkin and water. Add baking soda and cinnamon, mixing well. Add the 2 eggs and crushed shells, then stir in chopped nuts and raisins.
    Pour into greased loaf pan and bake at 350F for 1 hour. Cool. Cut into serving size pieces and freeze until needed.

    It's in the oven! I substituted a bit and used half whole wheat flour, dried cranberries, and threw some pumpkin seeds in along with walnuts and sweet corn. It smells awesome (about 20 minutes left in the oven)!

    Quick question - how much is a serving?

    I am not sure but I cut mine in small pieces...not to big, not to small but just about the size Susie can hold on to, so for me I have bunches of small squares...in baggies in the freezer!! I found that if its bigger and she cant hold it she doesnt really seem interested in it thats why I do the size I do. I usually give her 2 squares at a time and she goobles them down.

    Yay! I was just checking for Fall recipes for the fids! Peanut Loves to try EVERYTHING and if Pepper sees Peanut eating it suddenly he is interested and wants to try too (yay!)

    This stuff's yummy! I might make a loaf for me (minus the egg shell). Joule loved it (after she saw me taste it, of course).

    This looks like something my boys would love!
    I was going to carve pumkins with them and let them eat the guts and seeds, but to no avail... I went to a haunted house with some friends and my family carved without me! I will definitely try this so they can get their pumpkin fix... maybe even a special treat on thanksgiving?? :)

    my daughter just made something similar for our Frankie and he LOVES it. She cooked them as mini muffins so we froze most of them and pull them out a few at a time for him. He also loves to play with the paper wrappers when he is done....
