My question is does this mean that Sunshine is a boy! Sign of a mature bird and definitely hormonal.

Kiwi is female, and has been humping things since I brought her home at 7 months old. lol It isn't a sign of gender, maturity or hormones at all. Just something they found to do that feels good.

Girl birds do it as well. However, I would suggest either removing the perch and replacing it with a different one or moving it. While it is healthy it can also be unhealthy as they get protective of their mate (i.e., the perch), so it is usually better to remove it or move it so that it looks different. Hormonal behavior can become extreme with biting, refusing to come out of the cage, etc.,
